Pumpkin Bread

  • 5 eggs

    1 1/4 c. of vegetable oil

    1 can (15 ounces) solid pack pumpkin

    2 cups flour

    2 cups sugar

    1 pkg (4.5 ounces) of Vanilla Cook and Serve Pudding (powder)

    1 tsp. baking soda

    1 tsp. cinnamon

    1/2 tsp. salt

    Directions:  In a mixing bowl, beat eggs, oil and pumpkin until smooth.  Combine remaining ingredients; gradually beat into pumpkin mixture. 

    Pour batter into five small greased loaf pans and bake at 325º for 35 to 40 minutes or until a toothpick inserted near the center comes out clean. 

    Bread may also be baked in 2 large loaf pans for 60 to 70 minutes.
